Could you just mix the dough and knead by hand the old fashioned way? I could be wrong but I feel that the mixer just saves you the kneading by hand step.

I have made a video for making scrumptious dinner rolls called Matrimonial Rolls in the Ankarsrum. It goes live on Tuesday, May 24, 2022.
