This is a German heritage recipe from my Grandma, she called them Knoephla (pronounced k-nip-flah). The “k” is not silent.

This recipe is traditionally made entirely by hand. I have warm and wonderful memories of my Grandma making Knoephla when my family would visit their home in Lodi, California. My Grandma and Grandpa were German-from-Russia ethnicity and Grandma was a master of using humble ingredients like cabbage, potatoes, flour, eggs, and milk to create an incredible array of delicious, nourishing meals.

How to Serve

Your fluffy homemade egg noodles can also be served with just about any kind of meat, whether it’s beef, pork, or chicken. Roasted meat is especially nice in winter. And of course German sausages! Adding these noodles to a pot of Homemade Chicken Noodle Soup is sublime. There is no better comfort food.

Mixer + Handmade

I have adapted Grandma’s handmade recipe to the Ankarsrum Assistent mixer to save time and effort, then you can roll and cut the noodles by hand.

Do not be put off by the idea of rolling noodle dough out by hand. This dough is very easy to work with, easier than rolling out cookie dough, and the cutting goes quickly.

Once cut, you have the choice of cooking your Fluffy Homemade Egg Noodles immediately, freezing them for later, or drying them and then freezing them for longer storage. Use the tension knob on top of the mixer arm to position the roller about an inch away from the side of the bowl. The roller will still be free to move toward the center of the bowl, but this will prevent it from hitting the side. Let the mixer knead the dough until it is smooth and nonsticky, 3-4 minutes.

Stack the two end pieces on top of each other and the middle pieces on top of each other, making 2 stacks. Now use a chef’s knife to cut the dough into ¼-inch (.5 cm) wide noodles.
Sam traded in his plans to go fishing for a day spent replacing the radiator in his new-to-us (bought in December) truck. Very grateful he caught it before it overheated and blew a head gasket or ruined the motor. Later he was spotted (through a screen) surreptitiously washing my car.

Garden and food

The garden inspires our meals this time of year and I am conscious of a sharp thrill of sufficiency when I go with my basket to pick whatever is ripe. Zucchini daily, raspberries sometimes!

Harvests this week included zucchini, yellow crookneck squash, eggs, Meyer lemons, Zloty Lan chamomile, Persian basil, and garlic.

One special meal we ravenously enjoyed was a veggie-forward version of Spätzle (also spelled spaetzle), and Cream and Lettuce Salad. I find myself especially grateful for my heritage of thrift, received from my German-from-Russia (Ukraine) mom and Norwegian dad. Though they were not first generation immigrants, they held onto old ways of making do, nowadays known as sustainability. As an added bonus, I can make 49 different meals from flour, potatoes, cabbage, onions, and milk.

The sight of scale insects on my cherished Meyer lemon tree galvanized me into action. With persistence and know-how it is possible to squelch these parasitic insects. I have already wiped each branch and leaf down with a cotton round soaked in witch hazel (rubbing alcohol works, too). Next: spray thoroughly with my homemade All-Purpose Disinfectant Cleaning Spray, wait an hour, then rinse with a hose. Tree must be positioned in the shade. Direct sunlight can damage vulnerable leaves.

Applying “meal prepping” principles and strategy to bread means mixing up an extra large batch of bread dough by hand or using my Ankarsrum Assistent mixer and freezing it in loaf-size disks. As needed, thaw one piece of dough and bake a loaf of bread.

In the summer I do my best to avoid using the oven, but we need bread in the house, so if I am going to bake I try to make my oven multi-task. Here I am baking a small pumpkin saved over from the 2021 harvest in a pie dish along with a loaf of whole wheat bread.

Thrifty swaps

Four pints of homemade Maple Vanilla Syrup added to the pantry. It’s not “real” maple syrup, but is made of simple ingredients and saves us quite a bit of money with recent price increases.

In need of a new curling wand, I checked the stores and was shocked with the price! This particular wand is regularly priced $55. I paid $8.50 at Goodwill and it still felt like too much, for a used item.

Long before the Pioneer Woman, there was Jane Watson Hopping, the Pioneer Lady. My all-time FAVORITE cookbook author, Jane retired to southern Oregon and I had the pleasure of meeting her in high school! The subtitle reads “A Celebration of Summer’s Bounty” and that is exactly what it is! Recipes use fresh produce from your garden or local farmstand; lots of simple meals perfect for hot weather, delicious fruit-centered desserts, and scrumptious baked goods. As with Jane’s other books, you will find quaint poetry and stories that will bring a smile to your lips.

Her books are out of print, but I would like to invite you to search for it at my favorite online seller of used books.
Week 30: July 30, 2021

Weekly Tea Date with Mom ~

In case I haven’t mentioned it before, I have a standing weekly tea date with my mom. Since we live in the mountains far from town, I save up my errands for one day a week and that day is Thursday.

I’m not sure who looks forward to our weekly tea date more: Mom or me. Or possibly my stepdad, Rolly. We catch up on family news over a cup of tea chosen from Mom’s wooden tea chest. It is a special time and Rolly after a while retreats to his office to take care of business, giving Mom and me undivided time together.

This week I brought a surprise….

My Mom is of German-from-Russia ethnic heritage and learned to speak German at home; English in school. She has amazing true family stories of pioneer days on a prairie farm in North Dakota. I did not know they were amazing until I was grown, but that’s a story for anther day.

Back to the surprise…

A book that transported Mom back to the farm in North Dakota. (And hello, Jasper!)

I found a set of rare and very special books written about pioneer days in the place my mom grew up!

Women Behind the Plow by Sue B. (Kaseman) Balcom

https://dakotabooknet.com/?id=2&product_id=218

Ewiger Saatz by Sue B. (Kaseman) Balcom

https://dakotabooknet.com/?id=2&product_id=196

We had great fun poring over the oversized pages, reading pioneer stories of grit and determination that included farming with horses, butchering and sausage-making days, large families and large gardens, plagues of locusts, traditional Germans-from-Russia wedding customs, and vintage pioneer recipes from the early and mi-1900’s.

We perused the books’ many photos for familiar faces. Mom spotted a relative, several neighbors, and fellow church members, along with a picture of her favorite teacher’s sister. Miss Ella Ehman presided over a one-room school and lived at the farm with Mom’s family.

The fifth and last week of July was another hot one. This is the hottest July in my memory, but thankfully we received a little rain this week in the form of a morning shower.
In the meantime, I am decluttering the kitchen in preparation for canning season. There are few things more frustrating than trying to cook or preserve in a kitchen that feels crowded. I need to know where my tools and utensils are, I need elbow room for chopping vegetables, and I need counter space free for jars to cool. I need mental space just as much. Can you relate?

Like you, I don’t have a whole day or three or ten to sort, purge, and organize my kitchen; instead, I am tackling it in 15-minute increments, one drawer or cupboard a day. I’m making headway and it feels SO GOOD.

It is important to consider the cost of our time when we work on or in our homes. Time is one of our most valuable commodities.

Sequestering all the time he can spare from regular tasks and chores, Sam is making serious headway on the “new” wood shed. You will recall that Sam dismantled the nearly 100-year-old wood shed that was falling down, reserving the materials for building a new one. You can see what the original wood shed looked like here: https://chocolateboxcottage.tv/cottage-diary/musings-from-a-homestead-kitchen/

I am happy to report that Sam is making good on his goal of building entirely with reclaimed materials. Even the nails are being reused!

It is a thrill to watch the wood shed take shape under Sam’s skilled and hardworking hands. He has a vision and is working hard to bring it to reality. If it looks like the wood shed has always been here when it is finished, Sam will consider it a success.

We count ourselves extremely blessed to draw water from a natural spring for drinking water and a local ditch for outdoor faucets that water the yard, garden, and fruit trees. The spring water is incredibly tasty and pure and the ditch water is reliable. They both have their occasional challenges, as you can see from the pictures above.

A beautiful, nameless moth

The Chocolate Box Cottage Shopping Guide

Where we spend our money matters. Every dollar is a vote. Let’s vote for locally owned businesses and farmers whenever we can. Our community is our family at large, so let’s take care of each other!

Use this shopping guide in your quest to find bulk organic food, basic and specialty kitchen tools, cookbooks, garden seeds, plants, and more.

I encourage you to look around your house and rummage through your cupboards to find the supplies needed to make the recipes and projects at Chocolate Box Cottage. Most times, “close” is good enough. If you do need something particular, such as a bread pan, sewing machine, or food dehydrator, I recommend looking for a secondhand item first.

Where to Find Secondhand Items

Friends and family; ask for what you need. Aunt Martha might be pleased to gift you the 20 boxes of canning jars that are collecting dust in her attic.

Yard sales, garage sales, rummage sales, jumble sales, tag sales, moving sales, estate sales, church fundraisers – whatever you call them! Wherever people put their cast-offs out for sale!

Thrift shops

Join a local “Buy Nothing” Group on Facebook

Flea markets

eBay

Craigslist

Facebook Marketplace

SHOPPING GUIDE

I am offering this shopping guide to support your quest to obtain the items you need. These are things I use and enjoy and feel good about recommending. As always, do your research and buy what suits your needs and budget. Buy as good quality tools and equipment as possible. They will last longer and save you money (and tears) in the end. Except for books. Books are nearly always best purchased used.

Affiliate disclosure: I have affiliate relationships with a few vendors, including Pleasant Hill Grain Co., Lehman’s, and Amazon. I earn commissions from qualifying purchases. This does not affect the price you pay and in all cases, I only recommend products that I like and use or are similar to ones I like and use. Thank you!

* Because my Mom is German-from-Russia and my Dad is Norwegian, these ethnic foodways and cultural traditions are a part of my heritage. I have included resources for both German and Norwegian cooking below.

Bulk Organic Food

Please buy food from locally owned grocery stores rather than the big retail corporations. If possible, buy direct from farm stands and grower’s markets! Here you will find the best, freshest, most nutrient-dense food available. It really makes a difference – in flavor, and in your local economy. Get to know the farmers and shopkeepers in your area. Then, when you are looking for a particular item, ask! Often times they will go to extra effort to grow or stock items you need and want.

If you live in an area with less access to whole foods or bulk foods or organic foods, talk to the farmers and grocery store managers in your town.

If you still aren’t able to find what you need, look into buying through Azure Standard. Azure does not work like a typical online retailer. The way it works is you place an order once a month before a set cut-off date and your items are delivered by truck to a “drop point” in your area for you to pick up.

Click the link below to find out if there is a drop point near you and to get started!

https://www.azurestandard.com/?a_aid=r9AO3OhbYm

Disclosure: this is my affiliate link. I may receive compensation from Azure, this does not change the amount you pay.

Basic Cooking Tools

Go “yard saling!” Also called tag sales or garage sales in some regions, yard sales offer tremendous finds – sometimes! Be sure to inspect items carefully to ensure they are in good working order and don’t be afraid to negotiate on price if that is acceptable where you live.
