3/4 cup roasted carob powder (Bob’s Red Mill brand)
3/4 cup sugar (unbleached sugar, evaporated cane juice crystals, or coconut sugar are nice)
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon vanilla
1/4 teaspoon almond extract
Whisk carob powder, sugar, salt, and cinnamon together in a medium mixing bowl. Drizzle vanilla and almond extract over mixture and whisk well.
Transfer mixture to a clean, dry pint jar with a lid. Label and store up to one year.
Yield: 1 1/2 cups mix; about 16 servings
TO MAKE 1 SERVING OF CAROB COCOA: Whisk together 1 cup milk plus 1 heaping tablespoon CAROB COCOA MIX in a small pan. Place over medium-low heat until steaming, stirring occasionally. Do not allow it to boil. Pour into a mug and enjoy!
You might find more than one type of carob powder (carob flour) on the grocery shelf; roasted carob powder is the richest tasting. I highly recommend Bob’s Red Mill brand – it is delicious!
