Ingredients
3/4 cup roasted carob powder (Bob’s Red Mill brand)
3/4 cup sugar (unbleached sugar, evaporated cane juice crystals, or coconut sugar are nice)
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon vanilla
1/4 teaspoon almond extract
Instructions
Whisk carob powder, sugar, salt, and cinnamon together in a medium mixing bowl. Drizzle vanilla and almond extract over mixture and whisk well.
Transfer mixture to a clean, dry pint jar with a lid. Label and store up to one year.
Yield: 1 1/2 cups mix; about 16 servings
TO MAKE 1 SERVING OF CAROB COCOA: Whisk together 1 cup milk plus 1 heaping tablespoon CAROB COCOA MIX in a small pan. Place over medium-low heat until steaming, stirring occasionally. Do not allow it to boil. Pour into a mug and enjoy!
Notes
You might find more than one type of carob powder (carob flour) on the grocery shelf; roasted carob powder is the richest tasting. I highly recommend Bob’s Red Mill brand – it is delicious! Don’t forget to add the cinnamon and almond extract! These add depth of flavor and richness to Carob Cocoa Mix. Blessings and enjoy your hot, creamy, cocoa-style beverage.

This tastes more like Mexican hot cocoa which I love!!! I can’t have chocolate, it gives me headaches and just general pains. So I’m so glad I found this recipe- it’s yummy!
VERY tasty cocoa! I followed the recipe with the exact amount of milk. I found the cocoa flavoring could use some more milk, next time. The dash of salt was just the right amount. I made up two cups; one for hubby & one for me. He loved it as well. Going to throw away all of our Costco hot cocoa mix. Usually I don’t throw things out, but in this case I certainly will. VERY good, Michelle!
