Ingredients

Scale

1 cup + 2 tablespoons sugar

3/4 cup unsweetened cocoa powder (the kind used for baking; look for “Fairly Traded” on the label)

Pinch of salt

1 tablespoon vanilla

Instructions

Whisk sugar, cocoa powder, and salt together in a medium mixing bowl. Drizzle vanilla over mixture and whisk well. Transfer mixture to a clean, dry pint jar with a lid. Label and store up to one year.

Notes

TO MAKE 1 SERVING OF HOT CHOCOLATE: Whisk together 1 cup milk plus 2 ½ tablespoons HOMEMADE HOT COCOA MIX in a small pan. Place over medium-low heat until steaming, stirring occasionally. Do not allow it to boil. TO MAKE IN A MICROWAVE OVEN:

Place 2 ½ tablespoons HOMEMADE HOT COCOA MIX in a standard 12-16 oz. microwavable coffee mug. Add one cup milk; stir. Microwave on high 1 ½ minutes or until hot. Do not allow it to boil. You’ll have to experiment with the timing on your microwave to find out how long it takes. Some coffee mugs really heat up in the microwave, so be careful when you remove it after cooking.

  • You mentioned adding peppermint extract or oil when you are hearing up the milk and mix. How about using mint from your garden depending on the time of year? Maybe add a sprig of fresh mint to your cup. Could you flavor the mix by adding fresh mint after rubbing it with your hands and placing several pieces in the jar? You might be able to make a better suggest.

    • Those are lovely ideas, Deborah. I do sometimes add chopped mint leaves to top off a cup of cocoa. The freshness of mint is very nice with chocolate.

  • Sounds like the Hershey’s Cocoa Recipe on the side of the container. I love it…if you just want to make one cup, you can do 2 Tbsp. sugar, 2 Tbsp cocoa, a dash of salt. Heat a cup of milk to boiling in the microwave. Then I add just enough milk to the cocoa mixture to wet it well and mix so the cocoa can dissolve, then add the rest of the milk and about a 1/4 tsp vanilla. YUM!
